Resep Tengkleng Kambing

RESEP TENGKLENG KAMBING BESERTA BAHASA INGGRIS

Tengkleng kambing adalah masakan khas dari daerah Solo gaes. Masakan ini merupakan sup dengan bahan tulang kambing. Masakan ini mirip seperti gulai namun kuahnya lebih encer. Konon, sejarah masakan ini hanya dimakan para bangswan dan orang-orang Belanda di jaman dulu gaes. Udah cukup dongengnya, silahkan anda mencoba resepnya.
 








Bahan-bahan

  1. 1 kg tulang iga, potong2 ukuran sedang
  2. 1 ltr air 
    Bumbu halus : 
  3. 6 bh bawang putih
  4. 12 bh bawang merah

  5. 6 btr kemiri
  6. 1 bh pala (saya 1/2 sdt pala bubuk)
  7. 5 cm kunyit 
    Bumbu pelengkap :
  8. 2 bh kayu manis
  9. 5 bh cengkeh
  10. 2 btg serai, geprek
  11. 1 ruas jari lengkuas, geprek
  12. 1 ruas jahe, geprek
  13. 5 lbr daun jeruk, sobek
  14. 2 lbr daun salam
  15. 1 sdt kecap manis
  16. secukupnya Gula dan garam
  17. 750 ml santan encer
  18. 10 bh cabe rawit merah 
    Sambal rawit :
  19. 50 gr cabe rawit merah
  20. 1 bh bawang putih

Langkah

  1. Cuci bersih iga kambing, rebus dengan air sampai setengah empuk, angkat
  2. Tumis bumbu halus di wajan yang besar, masukkan serai, lengkuas, jahe, daun jeruk, daun salam, cengkeh dan kayu manis, biarkan tanak
  3. Kemudian tambahkan garam dan gula secukupnya
  4. Setelah bumbu harum dan tanak, masukkan iga kambing, lakukan sampai habis, kemudian tuang sisa air rebusan
  5. Aduk rata dan biarkan iga kambing sampai menjadi empuk dan bumbu meresap kira2 selama 30 menit, sesekali intip dan aduk rata lagi
  6. Setelah daging empuk, masukkan santan encer, aduk rata lagi biarkan mendidih banyak, aduk2 agar santan tidak pecah
  7. Kemudian tambahkan kecap manis, aduk rata lagi, masukkan cabe rawit merah
  8. Aduk rata kembali, biarkan mendidih, koreksi rasa, matikan api dan sajikan tengkleng taburi bawang goreng dengan nasi putih dan sambel rawit merah
  9. Untuk sambel rawit merah, giling/blender sampai agak halus, kemudian rebus sebentar dengan sedikit air, sampai air menyusut, hal ini agar cabe tidak cepat basi


    HOW TO MAKE TENGKLENG KAMBING

    Ingredients
    1. 1 kg of ribs of lamb, cut with medium size
    2. 1 litre of water 
    Ground spices :
    1. 6 pieces of garlic
    2. 12 pieces of red onion
    3. 6 seeds of candlenut
    4. 1 piece of nutmeg (me : 1/2 teaspoon of nutmeg powder)
    5. 5 cm of turmeric

    Complementary spices :
    1. 2 pieces of cinnamon
    2. 5 pieces of clove
    3. 2 stems of lemongrass. Crush it.
    4. 1 segang of galangal finger. Crush it.
    5. 1 segang of ginger. Crush it
    6. 5 seets of lime leaf. torn it
    7. 2 seets of bay leaf
    8. 1 teaspoon of soy sauce
    9. Sugar and salt according to your taste
    10. 750 ml of coconut milk
    11. 10 pieces of red cayenne 

    Chili sauce :
    1. 50 g red cayenne
    2. 1 piece of garlic

    Step
    1. Wash the ribs until clean, boil with water until rather soft, lift
    2. Saute the ground spices in big frying pan, put lemongrass, galangal, ginger, lime leaf, bay leaf, clove, and cinnamon. Let it cooked
    3. Then add salt and sugar according to your taste.
    4. After the spices is cooked, put the ribs, do it until the the ribs run out, then pour the remaining boiled water
    5. Stir and let the ribs until soft and the spices is pervasive around 30 minutes. Occasionally peek and stir again.
    6. After the meat soft, put the coconut milk, stir again and let it boiling, stir again so that coconut milk not broke.
    7. Then add soy sauce, stir again, put the red cayenne
    8. Stir again, let it boiling, taste the dish, turn off the stove and serve tengkleng. sprinkle with fried onion, rice, and chili sauce
    9. For chili sauce, blend until rather soft, then boil a few minutes with little water until water rather shrink. So chili doesn't quickly stale.
